What makes the distinctive flavors of Asian cuisine? It's the transformation of ingredients through natural fermentation techniques. At Vivant, we use only vegetable matter (fruits, vegetables, legumes, cereals, seaweed, spices) to produce enzymatic syrups (koso, choeng), lacto-fermented fruits and vegetables (including kimchi, preserved lemons, apricot-boshi, ogorki kiszone...), and tempeh and koji. We respect traditional techniques, using local ingredients: most of our ingredients come from around Grenoble and elsewhere in France. They come from organic and sustainable agriculture.
On our menu, you'll find traditional dishes (for example, Korean, Japanese, Cantonese, Indonesian...) as well as dishes inspired by our team's travels!
We work with market gardeners (organic) around Grenoble, and other producers in France. We buy locally whenever possible, and we communicate about our partners to help our community discover them.
