Come and discover the different recipes on offer, from the most traditional to the most original. Located in the Avant-Pays-Savoyard region, "l'escargot de Billième" is a snail farm specializing in the breeding of "gros-gris" snails. This species has been selected for its tender, flavorful flesh, which has the taste qualities of the petit-gris and the generous size of the escargot de Bourgogne.
From spring to autumn, the snails live in the open air, in parks where dense vegetation provides them with food and shade. After harvesting, they are cooked in a laboratory to European standards. A variety of recipes are available, using fresh vegetables and carefully selected ingredients. These include traditional escargots en coquille à la persillade, croquilles (crispy cookies), en persillade, with porcini mushrooms and trumpets, bear's garlic or cheese, to mix and match for your aperitifs. You'll also find snails of various sizes in jars, in their traditional court-bouillon, as well as a variety of escargotine specialties for toasting.
Enjoy them for your festive meals, but also all year round!
You can find the farm's products at local markets, and all year round at the sales office in Billième, by appointment.
