La Ferme de Chalonne is committed to promoting small-scale farming and, by the same token, is environmentally friendly, supportive and militant.
In their bakery, these farmer-bakers use this flour to make different types of bread from wheat, rye and spelt, as well as brioches, brownies, pizzas...
For their bread, they work on a very slow fermentation using pure sourdough, which takes the time to reveal all the aromas of the cereals, while ensuring that the bread is easily digestible and preserves well.
The fruit of this labour is then baked in a beautiful wood-fired oven with a revolving hearth to produce a soft crumb, a crispy crust and a nice woody smell...
The production is sold via short circuits and direct sales. It is distributed through AMAP (association pour le maintien de l'agriculture paysanne), organic grocery shops, farmers' markets in Lyon Montchat, Décines and Villeurbanne, buying groups, direct sales and farm sales.
With "Voisins de Panier", Ferme de Chalonne offers a wide range of excellent farm produce for sale on the farm every Thursday from 5pm to 7.30pm.
TipsSeveral times a year, La ferme de Chalonne organises "sourdough bread" courses. You'll be able to learn and/or perfect these different techniques.
