The distillery Les Feux de Saint-Jean is located on a ten-hectare organic farm in the heart of the Monts d'Ardèche Regional Nature Park: a place where nature is preserved, which is necessary for distillation.
With the exception of certain crops, we work our spirits from raw material to bottling.
Our whisky and rum musts are fermented in French oak tuns (Grand Vin de Bourgogne and Grand Vin de Bordeaux), so that the different yeasts selected can fully express their potential and complex aromas.
We distil in the traditional, artisanal way. Nicolas, the distiller, works in the traditional way with two open-flame stills. First, he patiently restored a 500-litre Guillaume-Fils still (Clermont-Ferrand - 1923) (open flame still and wood heater). The distillery was then joined by a fine 25 hl Charentais iron still (open flame and biomass heating) made by Chalvignac (Cognac) to ensure consistent production for consumers.
Although complex to master, the wood fire gives our distillates a distinctive and sought-after character.
The quest for quality is at the heart of our craft, as stated in the distillery's motto "With conviction and without concession".
We source the best raw materials locally, and work with organic farming labels. Our malted barley supplier is just 9 km from the distillery, and we produce some of our fruit directly for use in eaux de vie and preparations.
The Les Feux de Saint-Jean distillery is a signatory and partner of the "Manifeste de la Gnôle naturelle" (website: http://www.gnolenaturelle.eu/), which describes very well the values and quality commitments we uphold in the production of our spirits.
We are also targeting distillates in an original way, as we offer a range of gastronomic spirits dedicated to chefs for the preparation of savoury and sweet dishes.
