Created in 2018 by Chef Laurent Petit in the very centre of Annecy, Brasserie Brunet invites you to savour gourmet dishes inspired by the surrounding area. In the kitchen since 2021 but working alongside the Chef for the past 10 years, Chef Nicolas Guignard and his partner Pauline Lemettre can never say it often enough: simplicity, conviviality and respect for the land are the hallmarks of their identity. Together, they are committed to paying tribute to the essentials, in a cuisine inspired by the larder of yesteryear and the men and women who serve the land. They work exclusively in an ultra-short circuit, adapting to the daily life of the producers, randomly according to the seasons, the weather and its direct impact on the living world. So they use the produce in its entirety, in sauces, broths, crisps or reassuringly tight juices. Always careful not to waste anything while preserving the planet, they bring eco-responsibility and relevance to the taste of their dishes, with a bold attitude.
