3 generations have forged the spirit of the estate, and we in the Merle family wish to cultivate the land and raise animals in a natural environment, with a concern for its renewal so that future generations can continue this same activity... Our poultry are fed exclusively on our own cereals (local white corn, wheat and spelt) and dairy products. They also have free access to the meadows, where they peck at grass and worms. We wait 4 months for the chickens, 5 months for the poulardes and 8 months for the capons before maturing them in the spruce trees. We've also reconciled all our friends on the estate with our Bresse turkey, with its melting, juicy flesh, a characteristic feature of all Bresse PDO poultry, whose marbling and pronounced aroma are unrivalled.
