Sébastien Vauxion feels and narrates his own story through his plates. He shares his sensitivity, his best means of expression, articulating flavors from the sharpest to the most delicate. His dishes embody duality, extremes, contrasts - sweet, sour, bitter, yet all find balance on the plate.
